Smash Burgers

Counter to general burger convention, the key to a smash burger is exactly what it sounds like - smashing the patties down against the pan. But don't worry – done right, they're still gonna be loaded with juicy goodness. They secret? Searing on a hot pan creates a quick crust that keeps the juice inside the thin patties. Here's what you need to know:

Step One
Form ground beef into 2 ounce balls – one for each patty you want to cook. No seasoning is necessary.

Step Two
Put a thin layer of high heat oil onto  cast iron skillet or stove-top griddle and turn the burner up to high heat.

Step Three
Once it's hot, place a patty or two onto the pan and immediately smash it down with a wide, metal implement, like a spatula or a scraper. Allow to sizzle for about two minutes. After a couple of minutes, flip the patty.

Step Four
Once flipped, let it cook for about another minute and then add a slice of cheese (American is traditional.)

Step Five
Once the cheese has melted, remove the patty to a bun, dress to your preference and serve.
