Mediterranean Spiced Lamb

This version is bold & aromatic, featuring Middle Eastern spices, yogurt, and lemon.
Ingredients:
• 1 frenched rack of lamb (8 ribs)
• 3 tbsp Greek yogurt
• 1 tbsp olive oil
• 1 tsp ground cumin
• 1 tsp ground coriander
• ½ tsp paprika
• ½ tsp cinnamon
• 2 cloves garlic, minced
• 1 tbsp lemon juice
• Salt & pepper to taste
Instructions:
1. Mix the marinade: Combine Greek yogurt, olive oil, spices, garlic, and lemon juice.
2. Coat the lamb with the marinade and let sit for 30 minutes to 2 hours.
3. Preheat oven to 400°F (200°C) and sear the lamb in a hot pan for 2 minutes per side.
4. Roast for 20-25 minutes until medium-rare.
5. Let rest, slice, and serve with a tzatziki sauce or lemon couscous.
