Flat Iron Steak Tacos

Flat Iron is the perfect steak for tacos that bold, flavorful, and incredibly satisfying.
INGREDIENTS
For the Marinade:
• 1 lb flat iron, skirt, or ribeye steak
• 3 tbsp olive oil
• 2 tbsp lime juice (freshly squeezed)
• 1 tbsp soy sauce
• 2 cloves garlic, minced
• 1 tsp cumin
• 1 tsp chili powder
• 1/2 tsp smoked paprika
• 1/2 tsp black pepper
• 1/2 tsp salt
For the Tacos:
• 8 small corn tortillas (or flour if preferred)
• 1/2 cup chopped white onion
• 1/2 cup chopped fresh cilantro
• 1 avocado, sliced
• 1/2 cup crumbled cotija cheese (optional)
• 1 lime, cut into wedges
• Salsa or hot sauce for topping
DIRECTIONS
1. Marinate the Steak
• In a bowl, whisk together olive oil, lime juice, soy sauce, garlic, and spices.
• Place steak in a ziplock bag or shallow dish and pour marinade over it.
• Marinate for at least 30 minutes (or up to 4 hours) in the fridge.
2. Cook the Steak
• Grill Method: Preheat grill to medium-high heat and cook for 3-4 minutes per side until medium-rare (130-135°F).
• Skillet Method: Heat a cast-iron skillet over high heat, add a little oil, and sear steak for 3-4 minutes per side.
• Let the steak rest for 5 minutes, then slice thinly against the grain.
3. Assemble the Tacos
• Warm the tortillas
• Fill each tortilla with steak slices.
• Top with onions, cilantro, avocado, and cotija cheese.
• Squeeze fresh lime juice and add your favorite salsa or hot sauce.
