Classic Shrimp Scampi

INGREDIENTS

For the Shrimp:
1 lb jumbo shrimp, peeled & deveined
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (adjust for spice)
1 tbsp olive oil

For the Sauce:
4 tbsp unsalted butter
4 cloves garlic, minced
½ cup dry white wine (like Sauvignon Blanc) or chicken broth
2 tbsp fresh lemon juice 
1 tsp lemon zest
¼ cup fresh parsley, chopped
½ cup grated Parmesan (optional)

For Serving:
8 oz linguine or spaghetti
1 tbsp olive oil (for tossing pasta)

DIRECTIONS

1. Cook the Pasta
Boil a large pot of salted water and cook linguine until al dente. Drain and toss with 1 tbsp olive oil to prevent sticking.

2. Sauté the Shrimp
Season shrimp with salt, pepper, and red pepper flakes. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 1-2 minutes per side until pink and opaque. Remove and set aside.

3. Make the Scampi Sauce
In the same pan, melt butter and add garlic. Sauté for 30 seconds until fragrant. Pour in white wine and simmer for 2 minutes to reduce. Stir in lemon juice & zest, then add shrimp back in. Toss to coat.

4. Combine & Serve
Add cooked pasta and toss everything together. Remove from heat and sprinkle with fresh parsley & Parmesan.

Serve immediately with extra lemon wedges.
