Classic Prime Rib Roast

A foolproof, traditional method with a crusty, flavorful bark and juicy, medium-rare interior.
Ingredients:
• 1 bone-in prime rib roast (5-7 lbs)
• ¼ cup olive oil or softened butter
• 4 cloves garlic, minced
• 2 tbsp fresh rosemary, chopped
• 2 tbsp fresh thyme, chopped
• 1 tbsp kosher salt
• 1 tbsp black pepper
Instructions:
1. Take the roast out 2-3 hours before cooking to bring it to room temp.
2. Preheat oven to 450°F.
3. Mix butter, garlic, rosemary, thyme, salt, and pepper into a paste and rub all over the roast.
4. Roast at 450°F for 20 minutes, then lower to 325°F (165°C) and cook until internal temp is 120°F (for rare) or 130°F (for medium-rare).
5. Rest for 20-30 minutes before slicing.
