Balsamic Glazed Rack of Lamb

A savory-sweet glaze brings out the natural richness of the lamb with a tangy, garlicky depth.
Ingredients:
• 1 frenched rack of lamb
• 2 tbsp olive oil
• 4 cloves garlic, minced
• 2 tbsp balsamic vinegar
• 2 tbsp honey
• 1 tbsp Dijon mustard
• 1 tbsp fresh rosemary, chopped
• Salt & pepper to taste
Instructions:
1. Preheat oven to 400°F
2. Season lamb with salt & pepper, then sear in olive oil until browned. Set aside.
3. In a small saucepan, mix garlic, balsamic vinegar, honey, Dijon, and rosemary. Simmer for 3-4 minutes until slightly thickened.
4. Brush the glaze over the lamb and roast for 20-25 minutes.
5. Let rest for 10 minutes, then slice and serve.
