Bacon Wrapped Filets

In just four easy steps you can have a steakhouse favorite in your own home.
Step One
Coat filet mignons with a little olive oil and season with salt and coarsely ground black pepper.
Step Two
Carefully wrap the each filet with a bacon slice so it encircles it completely. Use a toothpick to ensure it stays in place.
Step Three
Add olive oil, butter, rosemary and thyme to a a hot cast iron skillet. Once it's sizzling sear the filets 2 minutes on each side. The bacon will crisp and caramelize as it cooks.
Step Four
Transfer the skillet to oven heated to 450 degrees and cook for 4-5 minutes, or longer if you prefer a well-done steak.
Don't forget to remove the toothpick before serving. The juices from the steak and the bacon will have created enough of a seal that the bacon will not need to be held in place.
